WIAW: veggie overload

Finally! I’ve been waiting for this since the weekend. I’ve got some serious greens for you.

As you know, I was away this weekend and so a majority of these pictures are from places I ate when I was there. Let’s go!

Chicken stir fry…with LOTS of vegetables. Definitely my favorite dinner from last week.

Asian-like salad of some sort! This was delicious…mixed greens, those crunchy crouton-like strips, chicken, and steamed mixed vegetables. This hit the spot.

VEGGIE WRAP! This wasn’t bad for the concession stand at the track meet..especially when my craving of vegetables came on full force. A spinach wrap stuffed with onions, tomato, lettuce, pickles, and peppers. My apologies for the not-so-great picture.

Another salad..this one sounds way better than it was..I should know by now that airport food isn’t ever THAT good. Anyways, it was lettuce topped with peppers, beans, tomato, and chicken which I just couldn’t get myself to eat. It did NOT taste good. I’d give the salad a 5/10.

THIS MEAL WAS SO GOOD. Ahhh probably my favorite all weekend. ANOTHER veggie wrap, this time with humus and chicken. And on the side? Quinoa salad. This was one of the most delicious and satisfying meals I’ve had in a looong time.

And why not through in my panera salad from last night in? It goes with theme for sure. I actually meant to order to thai chicken salad..but instead got the Asian sesame one. Oops.

That’s it friends! It was a veggie-licious week.

Weekend Recap

 

 

There’s nothing like blogging from an airport I tell ya.  I can’t seem to type out a full sentence without being distracted by the people around me…people watching at its finest.  I’m getting ready to board my last plane before I’ll be back at home sweet home.  Due to the time change, I was up at what my body thought was 3:30 this morning. Yikes, I’m tired to say the least.  I can’t wait to get home & relax!

I thought I’d give you a little recap of my weekend!  My parents and I left for the Western part of the country Thursday afternoon to go watch my sister run at nationals.  After a long afternoon/night of traveling, we finally got to our hotel at 1:30 AM, but it felt like 3:30 AM to us.  Luckily, I was able to sleep on the plane so waking up Friday morning wasn’t too bad!  My sister ran both Friday and Saturday night, so we had both days to hang out and sight-see a bit.  Not before a pool workout though!  Having access to a pool was GREAT.  I was still limited to cross training, so I took full advantage of the pool and did an hour of lap swimming/treading water/drills.  It was sweeeeet. While driving around to see the area, we found some snow-covered mountains!

I also had some delicious food, but I think I will save that for this weeks WIAW!  Warning, I was SERIOUSLY craving veggies all weekend.  I don’t think I’ve ever wanted them more than I did all weekend.

My sister did well in her races and we all had a great weekend.  I even got a giraffe pillow pet that is keeping me warm as I type this.  A 17-year-old with a pillow pet? Yes.  Embarrassed? No.

I’m airborne now and will be landing in about an hour…can’t wait to be home!  I’ve got a busy week ahead and I CAN FINALLY START RUNNING AGAIN.  Wahooooo!  Hopefully my calves won’t bother me as I get back to my training this week.  I’m reading the second book in The Hunger Games series and I’m anxious to get back to reading it, so I’m ending it here.  I hope you guys enjoyed your weekend & I wish you all a productive and happy week :)

Just Fillin’ Ya In A Bit

Sooo as I promised, I’m gonna fill you in a bit on my running career!  This post will also include my excuse for why I haven’t told you about my daily eats yet (isn’t that what the title of my blog is?!).  So where to start?  Running has become a very important part of my life.  I joined the cross country team my junior year and did OKAY, probably in the top 20 of my 100+ team (I know, crazy).  That winter, in the first week of track, I tore cartilage in my knee.  That was a huge upset and really put my running career on hold through winter and most of spring.  After rockin’ the knee brace post surgery for a couple of months, I started to heal and could eventually start running again.  This is when I kicked it into gear.  I had put on a bit of weight, just from not being able to exercise and was ready to slim down a bit and feel better about my body and be able to excel in my running.  The summer going into my senior year, I worked my BUTT off.  I woke up every morning and went right out the door for my run, and boy did my hard work pay off.  I went into my senior year of cross country feeling confident and eager to race.  I knew the weight I had lost had my coach feeling wary about how I was going to able to run…so I made sure to kick it during that first practice to make sure he knew that it was for the better.  Fast forward a couple months…my high school ended up finishing first in our division!  I had a solid year, and improved every race.  The best part was that I enjoyed every single bit of it.  I grew a passion for not only running, but racing as well.  The adrenaline that rushed through my body on the starting line was the best.  I became closer with all my friends and had not one regret the entire season.  The best part was the spirit days…

OLD LADIES ANYONE?

I’m currently running the 2 mile in winter track and although I love it, it’s not the same as cross.  I think I’ll always prefer running 5k’s over running around the track!  My biggest goal for this season is to break my school record-definitely a challenge, but hey what’s wrong with a good challenge?! Nada.

And now my excuse about the food.  Honestly, the reason I haven’t posted about what I eat throughout the day to fuel myself as a runner is because I haven’t been taking ANY pictures.  I’m just not used to it yet!  My goal for tomorrow is to snap some sweet pix of my meals before I start chowing.  I think that’s reasonable!  Just gotta remember.  So this is my promise to you that I will be better about posting my food intake from now on!
